Poutine with apples and maple-fleur de sel caramel

For 4 people


2 crisp apples, well washed and cut into matchsticks
1 C. butter
¼ tsp. cinnamon
60ml rum
¼ cup mascarpone or ricotta cheese
1 cup of Caramel Maple-Fleur de Sel


  1. In a medium saucepan, melt the butter.

  2. Add the apple sticks and sauté for 2 minutes.

  3. Deglaze the pan with the rum, let reduce for 1 or 2 minutes.

  4. Place the apples in 4 ramekins,   positioning them so as to give the illusion of fries.

  5. Add the cottage cheese.

  6. Drizzle with Maple-Fleur de Sel Caramel.
